The book "Apple II Reference Manual" contains a schematic and ROM listing for the Apple II and Apple II Plus. The book "Apple IIe Technical Reference Manual" contains the same for the Apple IIe. There are similarly titled books for other Apple II models. The former book is especially useful no matter what model you have, since the II and II+ used 74xx TTL logic, so you can see the details of things that were later combined (and added to) in custom ICs. Many of the early peripheral card manuals (Apple as well as third party) had schematics (and in some cases, ROM listings too), and as such, can be very educational. However, note that later peripheral card manuals were more user-oriented and did not contain schematics.
