Does anyone have a design that would allow me to tag onto the pins of the 65C02 inside my Apple IIc that would log the op codes and data that it is running? After logging it, I would then need to get that data into my Mac somehow, or Windows if I must, using a terminal program of some kind I assume.

My objective is to see where a copy protected disk goes when in its native Apple IIc environment, compared to where it goes when it knows it's looking at a disk copy.

Very (very) interesting! Thanks! I wonder if anyone else has used this or a similar product for doing what I'm trying? If so, any help, hints, or tips on setup would be most appreciated.

I haven't tried exactly that, but I intend to when I get around to it.
That Logic16 is a great device. There's also an 8-bit version which is less costly.
The saleae gadgets come with good quality hook probes. (The 8-bit version, at least, came with E-Z hooks which are as good as they get). Cheaper copy products come without those probes.
Their software runs on Linux, Mac and Windows. You can download it and run it in demo mode on your computer, without the device, to get a feel for it.
Sampling rate wise they can't compete with high-end logic analyzers of course, but for our type of chips they're good.
