One of the favorites here has been the 28L92; but unfortunately it has recently been discontinued.  See this forum topic, which also gives alternatives that are partially compatible.  Myself, I'm going for the MAX3100 SPI-interfaced UART next.

What's an additional VIA among friends, anyhow?

You could take a look at the TI 28L92 or the MaxLinear XR88C192CV-F. Both are compatible with the NXP SC28L92, which is what I have used in my POC units since V1.1. The TI and MaxLinear parts are QFP44, but should be manageable if you have reasonably good eyesight and steady hands.

MaxLinear also produces the XR88C92CJ-F, which is similar to the XR88C192CV-F, but with 8-deep FIFOs and in a PLCC44 package, which can be socketed.

I figured if I need one that bad ill put it on an add-on card.
my main issue now is routing the PCB. included below are the files for the ENTIRE project in KICAD.
please, as always feel free to give feedback and point out any oopsie on my part!

***NOTE: The extra pin headers on the CPU and PROP page ARE intentional, I just couldn't get them to work on another hierarchical page  ***
Thanks a million to all those who have been helpful as possible whilst putting up with my goofiness and schematic tomfoolery!
