This is more akin to verowire than wirewrap, but I see the benefit in a cheap and convenient construction technique. (Wirewrap is redoable, which is handy.)

It looks like it's kind of a hybrid. He is using wire wrap for point to point from the pin headers, but soldering sockets and jumpers to the pin headers. I saw someone else do this on YouTube for similar reasons, wire wrap sockets are too expensive, and making PCB's for one offs is a hassle.

Ah, thanks, that makes more sense! (To get proper welding at the contact points, you need sharp square pins to wrap the wire. So choose your parts with care.)
