Just as a quick update, I was very kindly sent the various boards mentioned above including the EPROM and I have now got the monitor working. I need to write it up and take some pictures. Unfortunately I don't have the means to read out the EPROM image at the moment.

Did you ask the company if they have an assembly listing for the monitor or even a binary or hex file?

You could always reverse engineer it to find out the memory map and how the peripherals are being access, then port over a simple monitor. A lot of folks around here have written their own and ...
